Green Smoothies With Pumpkin

Green SmoothiesYou all know me. I am a huge fan of green smoothies. I’ll throw just about any combination of fruits and vegetables into my blender and call it breakfast, lunch, or snack. This new recipe for green smoothies is one that I actually swiped from a friend of mine, but I am completely in love with it! It tastes just like pumpkin pie in a glass, and with the holiday season just around the corner, it’s good timing to discover it too!

I made these green smoothies using pumpkin puree from the pumpkins in my garden, but if you don’t have a fresh pumpkin on hand, it shouldn’t be hard to find organic canned pumpkin at your local health food store.

On another note, I’ve recently discovered that I actually like adding raw egg yolks to my green smoothies. They are an excellent source of protein, omega-3 fats, and fat-soluble vitamins (including vitamin D). If you are going to add raw egg to your green smoothies, take care to ensure that you only use the freshest, organic eggs that you can find. If the idea of adding raw egg to your smoothie doesn’t appeal to you, you can always boost the protein levels of this smoothie by substituting a scoop of your favorite protein powder.

To make these green smoothies, here are the ingredients that you are going to need:

  •  2 egg yolks or 1 serving vanilla protein powder (rice or whey-based is preferred)
  • 1 cup of homemade pumpkin puree or canned pumpkin, preferably organic
  • 1 cup raw or organic milk (or use coconut milk for a vegan smoothie)
  • 1 banana, preferably previously peeled and frozen
  • 1 teaspoon organic vanilla extract
  • 2 teaspoons pure maple syrup or raw honey
  • pinch of nutmeg-optional

All of the ingredients should be added to your blender one at a time and blended together until smooth. Add the ice cubes and then blend it again. This smoothie is best served cold, so you should serve it right away. Use it for a snack or as a healthy alternative to after dinner dessert. I can guarantee that you are going to love it! My kids are big fans of these green smoothies, so it’s also a great way to get your kids to eat more fruits and vegetables this fall.
