Coconut Water Energy Smoothie

This not-so-green, green smoothie has everything you need for a vitamin-rich, hydrating breakfast or snack. Keep reading to find out how we turn spinach purple!

Ok, so the secret is blueberries and strawberries. Blueberries are full of antioxidants and vitamins C and K. This combo has been shown to be positively correlated with sharpened memory and a healthy heart. Strawberries, our low calorie berry buddy, gives us some fiber (shout out to those little seeds that get stuck in your teeth) and holds more Vitamin C in one normal-sized berry than you’ll find in your average orange. Kinda like that whole “bananas don’t have as much potassium as we think they do” thing…

Speaking of which, enter spinach! The potassium-packed ingredient that knocks this beverage out of the park. Not to diss bananas, we still love them for their sweetness and fiber! However, they don’t hold a potassium candle to the green, leafy spinach, weighing in at about 167 mg of potassium per cup. “What good is potassium anyway?,” you may ask yourself. Other than it being a fun word to say, potassium functions as an electrolyte, meaning it keeps the fluids in your body in check! To top it all off, the spinach in this drink pairs exceptionally with coconut water, pop cultures (and our) favorite hydrator! Coconut water is nature’s way of telling us there’s a tasty and refreshing way to get our daily fluids in. The high fiber in this smoothie needs the “washing down” effect of coconut water to keep your insides functioning at it’s optimal performance.

 

Ingredients:

  • 1 1/2 cups coconut water
  • 1/2 cup blueberries (frozen or fresh)
  • 1/2 strawberries (frozen or fresh)
  • 1 1/2 cup loosely packed spinach (rinsed)
  • Optional: few cubes of ice, 1 Tbsp. flax/chia/hemp seeds, pinch of cinnamon

 

Instructions:

1.) Prep your ingredients: rinse spinach thoroughly (dirt is not an ingredient here for good reason! Yuck!), chop stems off of strawberries, rinse berries

2.) Place all ingredients (except coconut water) in blender and blend

3.) Add coconut water

4.) Blend again and enjoy!
