Chia Seed Green Smoothie

Chia seeds, though small, pack a surprising amount of nutrients. For starters, chia seeds store protein, omega 3 fatty-acids, and an impressive amount of fiber, making this chia-based smoothie one of the most filling breakfasts you can whip up. In addition to being filling, this smoothie has just 4 ingredients, making it a quick option that won’t put you over your calorie count for the day like it’s other “quick” competitors might (see: donuts, bagels, granola bars). This chia seed smoothie pairs with healthy dairy-free milks (soy and almond work best) and the sweetness of mango for a refreshing smoothie you’ll likely keep in your morning rotation.

Mangos, like carrots, are rich in beta-carotene, which is known to boost immunity and health. Mangos are also low in fat and high in many vitamins (primarily A and C) which make it the perfect sweet addition to this filling chia smoothie. This recipe utilizes frozen fruit so you finally have something to do with all those frozen bananas! (If you didn’t already know, placing your ripe bananas in the freezer preserves the fruit for future use and eliminates wasting bananas that start turning brown before you can eat them).

Smoothies have historically been given a bad rap for being an empty breakfast or not filling enough for those who like to wake up and eat something hearty and satisfying. This smoothie proudly discredits this theory, packing large amounts of protein and fiber. Whipping up this beverage will take you 10 minutes to make and will keep you full through the morning hours.

 

Ingredients:

  • 2 Tbsp chia seeds
  • 1 cup of Spinach
  • 1 1/2 cup almond milk
  • 2 frozen bananas, sliced
  • 2 cups frozen or fresh mangos, diced

 

Instructions:

1.) In a separate bowl, whisk together chia seeds and 1/2 cup of dairy-free milk of your choice. Place this dish in the fridge and let sit for 5-7 minutes

2.) Blend bananas and remaining milk in a blender

3.) Add mangoes and Spinach and then blend until desired consistency

4.) Take chia mixture out of the fridge (should be a gel-like consistency) and pour into the blender

5.) Finally, blend until smooth.
