Blueberry Mint Green Smoothie
Mornings and mint are a natural coupling. Most toothpastes are a mint flavor. Beyond brushing, I sometimes like to start my day with a refreshing sip of a Blueberry Mint Green Smoothie. This raw green smoothie is sweet and crisp, and loaded with energy. Blueberries are well known for their high dose of antioxidants (better than a glass of orange juice!) Mint has a crisp, refreshing flavor and a fragrance that wakes me up. I have a few variations of this mix of blueberries and mint, but today I’m sharing a creamy raw green smoothie made with raw almond milk and avocado.
Preparing the ingredients in advance makes blending a smoothie as convenient as reaching for an empty calorie treat. For the Blueberry Raw Green Smoothie, I will be sure I put blueberries in the freezer. Frozen berries eliminates the need for ice cubes. Less water or ice cubes means a less water-down smoothie; that equates to more flavor! Rinse the berries and pat dry, then freeze them in a single layer. I use a baking pan lined with parchment paper.
Mint is considered a tender herb by gardeners. This means it will keep fresh in the refrigerator for about two weeks; if properly stored. To keep my mint leaves fresh, I store them upright in a mason jar with a little water. First, I gently rinse the mint leaves and pat dry. Next, I remove any wilted or discolored leaves; they will accelerate spoiling other leaves. Finally, I trim the bottoms of the leaves. I place the leaves upright in a mason jar with about an inch of water at the bottom. If the lid won’t fit on top, I use a plastic bag held in place with a rubber band.
Adding mint to my diet is genius. The health benefits of mint are too numerous to mention. The bright green leaves are packed with antioxidants. The major benefits of mint relate to digestion. Mint cleanses the palate, aids in digestion of your meal, and reduces the body’s production of gas. Besides minimizes farts, mint inhibits growth of bacteria in the mouth. The result? - 1 cup blueberries (fresh or fresh frozen)
- 1/2 avocado
- 10 fresh mint leaves
- 1 cup raw almond milk
- Using a very sharp knife, loosely chop mint leaves. Dull knives and prolonged chopping will leave the mint’s flavor on the cutting surface.
- Slice half of an avocado.
- Add blueberries, avocado, mint leaves and raw almond milk to blender. (If using fresh blueberries, add a few ice cubes.) Blend to desired consistency.
